Rottissere Chicken

I bought a Rotisseriechicken at Sams club the other day. They are always so good and this one was too! It was $4.99 for the Chicken. We ate it for dinner and I had leftover meat and cooked the bones in water to make chicken broth and got all the meat off the bones. I mad chicken salad for lunch the next day using just mayo, onions and celery and ate it for lunch for 2 days. It was so delicious.

Sam's club sells their Rotisserie chicken salad for over 10 bucks. You do get quite a bit but that's a little too much. It is delicious though. But the one I made was just as good.

So the next day I poured the chicken broth and what ever chicken was left over and put it in a pan and put it on high. I added a little water and make some biscuit mix and dropped them in for dumplings and had chicken and dumplings and it was delicious and had enough for the next day! so I made about 2 dinners and 2 lunches from the $4.99 rotisserre chicken.

You did very well. They cost more than that here, but are almost as economical as buying a whole chicken and doing it ourselves.

There is so much you can do with a leftover chicken! Too warm for it, but I like to make Chicken and Dumplings.

Ours around $6.99 and it does the same for my husband and I. It will go for 3 meals. :)
