Cauliflower Rice - nice alternative if on a low carbohydrate diet.
Most of the time i follow a low carbohydrate diet as it helps me to lose weight and as im diabetic it keeps my blood sugar low.
I do miss rice sometimes so i use this as a nice alternative, what you will need is a whole cauliflower, or you could buy the fresh florets in a packet.
chop them into medium size chunks and then pop them into a blender or chop them up with a hand blender, when the cauliflower resembles grains, heat up a frying pan with a little oil, u can add different herbs etc for a different taste but what i do is gently spray the cauliflower with some spray oil then mix in some thyme, chilli granules, some chopped onions and a little salt and black pepper.
THen just fry the cauliflower until its at a texture you like, i fry mines for about ten minutes.
for other ideas why not add a little egg to make a egg fried rice alternative, or add some vegetables and meat or chicken to make like a risoto kind of dish.

This is a good idea. I think we tried boiling then chopping in a blender. I'll have to try this way. We also use cauliflower for mock "mashed" potatoes. But I am not about to give up real potaotes or rice.

paigea if you chop then fry it it doesnt go to mush, i make mash with it as well but mash it with grated cheese and butter, makes it taste nicer.

What a great idea! I usually make faux mashed potatoes with cauliflower.

I am going to try that. We like the faux mashed potatoes quite a bit.
