Stuffed Tomatoes

One of my favorite things to make is Stuffed Tomatoes.

I follow a food combination way of eating and this complies with that style.

I usually use 4 tomatoes, but on occasion become quite daring with 6 tomatoes!

Take 4-6 onions and slice them as thin as possible and saute in butter or olive oil. Don't worry if it seems like a lot of onions, it will reduce during the cooking. Cook until caramelized.

Take 1 lb of ground turkey (you can use ground pork but the turkey is healthier) and add to onions and cook through. I like to add hot pepper flakes to the mix, it's a personal choice.

Chop mushrooms and cook until almost crisp and then add 3-4 cloves of garlic, or to taste. I also add fresh herbs, usually tarragone, rosemary or basil (I grown my own). Turn off and then beat 1-2 eggs and add to meat.

In the meantime, take your tomatoes and spoon out the inside. (I save this for salads and sauces)

Stuff with your mixture.

Add fresh parmesan cheese.

Top with tarragon or basil or whatever you want (I make it different each time)

Drizzle with olive oil.

Cook in a 350F oven for about 15-20 minutes until heated through and cheese is melted.

Make this and you will think that you died and went to heaven! 8)

This sounds fantastic, and definitely different from the way I usually make mine. I tend to use tuna fish. But this idea sounds quite delicious and something I need to add to my cooking plans in the VERY near future. Whatever the style or variety, I have not made stuffed tomatoes in a good while.
