Others does not know that Okra or Lady Finger can be made into delicious omelet and fritter. Others prefers okra than eggplant because it has no overpowering flavor and can easily match with other ingredients. It is also cheaper during its fruit harvesting season. It can last for several days in the vegetable compartment without rotting.
Our recipe is called Okra Tuna Fritter. This is crispier that the omelet because higher concentration of starch. The crunch adds to the enjoyment in eating this dish.
The ingredients for our Okra tuna fritter are:
Steamed Okra or Lady Finger
I can of tuna flakes in oil
All purpose flour
3 pieces beaten egg
1 teaspoon baking soda
1 bulb garlic, peeled and finely chopped
1 red onion, finely chopped
1 small bunch of cilantro, finely chopped
Salt and pepper to taste
Brown sugar or seasoning
Here is how how to cook the fritter:
Flatten the steamed okra using fork, rolling pin or bottle leaving the stem holder intact.
Place in a bowl flattened okra, tuna flakes in oil and the beaten egg, then mix.
Add the chopped garlic, onion, cilantro, salt, pepper, brown sugar or seasoning, the mix again.
Put the baking powder, carefully adding the flour and cornstarch while mixing until you can achieve the easy forming dough mixture.
Put drops of oil in a small oblong plate just to grease the surface.
Place the one flattened okra coated with dough in oblong plate for easy sliding.
Heat cooking oil in a pan then slide the ready okra at the oblong plate.
Fry the okra until cooked in golden brown color.
Place it in a platter with kitchen towel paper to drain excess oil.
For dip sauce pick your choice from any of these two:
Mix vinegar, soy sauce, finely chopped garlic, onion and red chili.
Combined mayonnaise and ketchup or mustard
