Ever wonder: What makes a hot pepper so hot? Or, Is it good for me?

There is an ongoing trend to grow the hottest pepper one can, then eat, or at least taste it so one can (if you will) achieve bragging rights. Ignore, if you will, that effect the following day...

Now hot peppers contain a special ingredient: capsaicin. What can be said about capasaicin? This DecodedScience article provides an adequate answer and should anticipate most of your questions and more.

Great article. I like peppers. My son grows some in the greenhouse. He went to India and learnt to love the really hot ones but I don't like them too hot.

I don't mind a little cayenne in fried chicken crust or certain other foods, and I don't mind a cherry pepper. Certainly I don't mind banana peppers, which aren't hot at all. They go well in tunafish salad. I can and will eat others in moderation if served me, but I don't initiate the action.

I once grew some jalapenos but let them grow to a point they turned nearly black. I was afraid to even take a bite of one. I thought they were some kind of hybrid pepper. I never found out for sure. The habanero looks like a jalapeno but is so much hotter. I took a bite of one of them at a Mexican Market and well, spent the next 15 minutes gulping down cold cola. I think the manager of the produce thought I was foolish to try it but he was the one who offered me a bite of it in the first place. I am just a dumb gringo I guess.

Dumb would be to grin and make some stupid statement about how wonderful the experience was.
