What's for dinner? January 29
What is everyone having for dinner tonight? I want to know!
The pickings are getting slim here at the end of the week. We have plenty of fresh fruits and veggies but no meat/fish thawed from the freezer and no leftovers left. I didn't buy anything at the grocery store today other than what I needed for an antipasto salad that I'm making tomorrow. I'm really making an effort to eat what we have in the cabinets and freezers.
So, on this Friday night, we are having a fast, easy, very cheap, and very tasty meal: linguine with oil and garlic. I simply chop up some cloves of fresh garlic (I like a lot of them) and saute them in extra virgin olive oil until they just start to turn brown. Then I toss al dente cooked linguine into the garlic and olive oil mixture to coat it evenly, serve it, and top with some freshly grated Parmesan cheese. It is delicious and costs like $1.50 per serving if that.
