The Egg and I and a Colleague

I had a breakfast meeting with my colleague at the restaurant, The Egg and I . It is a chain of restaurants in 20 states of the U.S. ( Click this link for a list of locations. )

They had quite a nice menu and their coffee and the service was good at the location down the street from the extended-stay hotel we are staying in. I made my selection from the Smarter Choices section.

The Vera Cruz Chicken & Avocado Omelette is "an egg white omelette with grilled chicken, fresh tomatoes, onions and green chiles. With Jack and Cheddar cheeses and fresh avocado." I had them hold the cheese. It was delicious. Both the chicken and the egg.

My colleague and I went over a bit of the program we are facilitating, as we were eating. I think we both are similar in that we get a bit on over-drive and need time to focus (by ourselves).

We are back at the hotel, and meeting again at noon, so we can find the location, meet our client contacts, and set up the rooms before the participants arrive and training begins. Once the first class begins at 3:00 (mine starts at 4:00), we will go until 11:30 tonight, then pack up and get back to the hotel with our first day behind us.

I have a new company laptop with which I need to familiarize (technology IS my friend, right? That needs to be my mantra instead of dreading it). It is "crunch time" for me, and I have two hours to look again at the presentation and my guide, just so I am not surprised by a slide I have not seen before. I know I will be fine, once I find my stride.

I am still not sure which came first, the chicken or the egg . But what I can tell you is that I am glad that The Egg and I is where I started my day with a high-protein breakfast, so that I will not crack (*groan*) under the pressure of the day.

That seems like a great restaurant. I don't think they exist in Georgia. I need to click your list to see their locations. Good luck on your job.

I just clicked on the link and there are two in Georgia, one in Columbus and Valdosta. That is in the middle and south of the State, not in the Northern part of the State where I live.

There is a wonderfully funny book titled The Egg and I by Betty McDonald (I think). Anyone who has lived on a farm would enjoy it.

I looked at the locations for The Egg and I. There are two in NC but only one I can visit, the one in Cary. I am not allowed to go to Chapel Hill as I do not lean far enough to the left to fit in there, lol.

The pun at the end of your post cracked me up. (Sorry, I had to do it.)

I hope your first day as a trainer went well. I feel sure it did as I am confident you were well prepared by the time you took center stage.

Your breakfast sounds delicious. I have never heard of this restaurant in Pennsylvania or Louisiana. Make sure you have some fun in your classes that you teach. You do not want to put the participants to sleep.

CoralLevang That sounds like a great place to eat a healthy meal. The only place like that around here is IHOP where you can formulate your own omelet.

Avocado in omelette? Noow that I hadn't thought of. In curry or on pizza, yes, but not with an egg.
