Recipe Challenge With Coral Levang

I love a recipe challenge. First of all I get kind of tired of the one person meals I throw

together in my usual rush. So it's fun to stop and think.

Here is part of what CoralLevang has listed from her food stores at:

  • Several cans of beans--red kidney, pinto, great northern, black

  • Rice--brown, white, and jasmine

  • Pasta--gemelli, fusilli, penne, Filipino pancit canton noodles

  • Grains--quinoa and barley

  • Beans & legumes--black lentils and small red beans

  • Canned tomatoes, tomato puree

I would make a casserole, either vegetarian, or perhaps adding some ground beef. It

would be layered.

I would choose a rice or grain, perhaps two. An alternate could be pasta.

I would choose either a bean or perhaps the black lentils. They would look good next to

a layer of white shredded cheese, or white rice.

I think of colors in a layered dish. It looks good for a moment after being served!

I would cook the grain/rice,/pasta, the beans/lentils and then use a glass Pyrex dish,

the large rectangular one. So I'm making 8-10 servings.

I would layer the foods with or without sauted ground beef - maybe with sliced

mushrooms? Orange or white colored shredded cheese could be layered, or just put on

top.

I would serve this casserole on a cold winter evening with a green salad. And red or

white wine depending on the meat/cheese used in it.

Now I'm getting hungry!

If I ever make this - it will be called Coral's Casserole.

I am not good at cooking. If I were to use all these ingredients, I probably end up with very healthy dog food.

AliCanary I am not a fabulous cook - though often shredded cheese saves me!

If that's all I had in my cupboard, I'd go out emoticon :smile: One of the problems with food and online posts is that if one's in a different country then some of the foods are unknown, others unavailable - and food styles/cultures differ so it's something that doesn't easily cross the pond.
I'm hungry now.
