Banana Bread my way!!
I had a recipe for banana bread which I made many times before, but I didn't have enough bananas this time, so I improvised and added banana pudding mix to it. As you can see, I ate half of it already, lol.
2 cups a/p flour
1 box of instant banana pudding
1 tsp. baking soda
1/2 cup butter
3/4 cup brown sugar
2 beaten eggs
3 mashed overripe bananas
Preheat oven to 350 degrees F . Lightly grease a 9 x 5 inch loaf pan.
In a large bowl, I mixed the first four ingredients together. In another bowl, I creamed the butter and brown sugar, stirred in the eggs and mashed bananas until well mixed. Then I added the banana mixture into the flour mixture, stirred just enough to moisten it. Batter will be stiff.
Then I poured the batter into the prepared loaf pan. I let it bake in the preheated oven for app. 1 hour or until a toothpick inserted into center of the loaf came out clean. Then I let it cool in pan for 10 minutes, before turning it out onto a wire rack.
Let cool completely and enjoy!!
