Good Afternoon.

Well its another cold but beautiful day here in Suffolk UK, I went to collect my little grandson from nursery half an hour ago and he's asleep already bless him, I think he has had a busy morning playing outside judging by the colour of his trousers. Anyway Im going to make the most of the peace and have a bit of lunch with my husband.

I need to make some more soup for lunches but I just seem to run out of time this morning, I will have to do it tomorrow now as I really don't feel like doing it after little man has gone home.

I used my new crock pot yesterday for the first time, we had veggie casserole and dumplings, I was so pleased with the results Im definitely going to use it a lot from now on, its so convenient to just pop everything in and forget it.

Does anyone else have any good vegetarian recipes for a crock pot?

Vegetarian? You could try making minestrone in the crock pot.

I wonder if you have tried to make peanut or black bean soup. It takes a long time to soften the nuts and beans to make the soup tasty.

I'm not vegetarian and I don't use to spend a lot of time into the kitchen. I prefer some easy recipes.

I made yellow pea soup in crock pot last week. It is spiced with summer savory which is a French Canadian favorite. Just split yellow peas, carrots, onions and celery. I do make a vegetarisn lentil soup too but I have never made it in the slow cooker, it has onion, carrot, garlic powder, olive oil, celery and small pasta. :0

I'm learning new ways to use my crock pot from my younger son. Obviously, I have been some things wrong, but slowly I am improving on my dinners. That crock pot dinner sounds very good.
