Spanish rice recipe
Tonight I will be serving spanish rice with my enchiladas. Here is the recipe that I have come up with after experimenting a little:
This recipe is only for 2-3 servings.
1 TBSP olive oil
1 cup of Minute rice
1/2 cup onion diced
1 tsp garlic powder
1 1/2 chicken broth
2 TBSP tomato paste
pinch of Oregano
Brown the rice in the olive oil. Add the onion and garlic powder and continue to brown for about 5 minutes, stirring frequently. You can also use minced garlic, instead of garlic powder.
While this is browning you will want to get your chicken broth ready. I boiled water and added chicken bouillon cube to make mine.
Add tomato paste and oregano to the broth.
Combine the broth and rice, cover and cook until the rice is tender. (about 10 minutes)
I also added 1/4 cup of diced tomato to mine.
