My low carb thai red curry with extra curry powder

I have just had the most amazing curry.

I used Thai red curry paste which i haven't used before.

heres the recipe.

you will need:

a packet of skinless chicken breasts

a pepper

some kale

onion

two tomatoes

half a tin of coconut milk

avocado

chicken seasoning

curry powder

thyme

salt if you like it.

oil

garlic powder

First of all i chopped up the chicken breasts into small pieces and then placed in a mixing bowl.

add a little garlic powder, 2 tablespoons of thyme, about 6 tablespoons of curry powder , and 2 tablespoons of chicken seasoning. and mix into the chicken

fry this on medium to high heat until the chicken is a little browned all over then stir in 3 or 4 tablespoons of thai red curry paste then fry for around 10 minutes on a lower heat.

chop up the tomatoes, half a pepper and a small onion and throw that into the pot as well.

boil the kettle and add half the tin of coconut milk with some hot water then cover the mixture, you want it so that it just covers the contents.

cover with a lid and leave to simmer on medium heat for around 20 to 30 minutes, check often and taste liquid, sometimes salt or more curry powder is needed.

as this is cooking boil some kale.

when the sauce of the curry begins to thicken and evaporate a little usually that means it is ready, but taste it, the longer you leave on the cooker once it starts to thicken, then thicker it will get.

serve with ripe avocado, and you can serve with rice or pasta if you dont mind the carbs.
