Fool Proof Banana Nut Bread

My grandma is the queen of improvisation and making things work. She isn't that great in the kitchen, though. Her methods usually involve something either pre-made or that come in an easy-to-assemble box.

One thing she makes that's amazing, though, is her banana nut bread. I thought I'd share the recipe for those of you who are either not so great in the kitchen or just looking for a quick, easy recipe:

Ingredients:

1 box of yellow cake mix

3 eggs

1 cup milk

1/3 cup vegetable oil

2 overly ripe bananas, mashed

1 cup chopped walnuts (optional)

Directions:

Pour the cake mix into a bowl. Add the eggs, milk and oil, and use a hand mixer to blend well. Then, add the bananas and continue mixing the with the hand mixer. Pour the batter into muffin trays or a bread pan. Top with walnuts. Bake according to the directions on the box.

Seriously. This recipe turns out great every time. It's super moist, and a great snack to take for an on-the-go breakfast. I hope you enjoy!

I make banana nut muffins. I use Martha White's mix. :)

I've never heard of banana nut bread made with a cake mix, but I don't know why it wouldn't be good.

I saw this earlier this a.m and thought what a great recipe. It was pouring rain this afternoon so I thought I'd give this a whirl. I didn't have yellow cake mix, but I had chocolate so used it. I made it in bread pans and then topped it off with cream cheese icing....Awesome it was, and now all gone..lol. Thanks for sharing it, I'll be making this again.
